One of my favorite things to make in the kitchen are egg casseroles. Don't ask me why....actually, DO ask me why, cause I think I know! I'll tell you in a minute... ;)
I usually make the same one or two recipes, so I was looking for a new one to try. I came across this one on Pinterest here. I was drawn to it because it uses cottage cheese, and I had some in the fridge that needed to be used and I don't like cottage cheese plain - bleh! Most of my other recipes call for milk, so I was intrigued to see what the cottage cheese would do to the taste and texture.
I made a few tweaks to the Pinterest recipe, which you'll note in the full recipe below. And guess what! The whole family LOVED it! My 4 year old said "can I have this every day?" *Swoon!* When I make other egg casseroles my boys aren't as eager to eat them, so I'm thrilled they like this recipe.
Okay, let's get to it. It involves eggs (obviously), diced green chiles, cottage cheese, red bell pepper, crumbled bacon (we cheated and used the kind from Costco) but the real deal would be even better! Oh and hash browns.

I'm embarrassed to say that I was totally suckered into an infomercial type thing at the grocery store a long time ago. Someone was demonstrating and selling these whisks. I stood there with my jaw to the floor as I watched them whisk by simply pushing the handle up and down. It amazed me, for some reason. They showed how it can whisk and froth milk or cream and a bunch of other stuff, too. It makes everything fluffier than a normal whisk can -- trust me, I witnessed it with my own two eyes! ;)
Oh, AND, after I bought *a few* (#sucker), I realized it's a total tricep workout too. You can bake AND workout at the same time! OORAH!
This isn't the exact one I have, but I found a similar one on Amazon, in case you want to try it. You can thank me later. ;)
ANYway, chop up the pepper, mix the ingredients together, reserving some bacon and peppers for the top.
After baking for an hour, it came out golden and colorful. I didn't add green onions, like the recipe called for, but I bet that would be a nice touch. I'm pleased to report the cottage cheese made it really creamy and flavorful. Mmm.... It is so. good.
I made this casserole a few times for my family and others, to make sure we REALLY liked it before sharing here, and we DO. <3 You'll have to give it a try and let me know what you think!
