Easy Gluten Free Chicken Apple Sausage Potato Meal

I haven’t fully explained this here, but Cory got diagnosed with a wheat and dairy allergy shortly after our first son was born. Mega-bummer, but I still love him!😉If you haven’t heard the story of how we found this out, it involved a piece of chicken and a 9-1-1 call. Ask us about it some time.😉

After our second son was born, our lovely community of friends brought us meals to help with the transition, which is such a wonderful treat. Since the “gluten/dairy free – thing” was fairly new to us at the time, we had a good laugh when almost everyone brought us some variation of THIS MEAL. We figured it must be the first thing that pops up when you google “gluten and dairy free meal.” But we absolutely LOVE it, so thank you, friends, for introducing us to this! Now we make it all the time.🙂

Ingredients & quantity (for a family of 5-6):

  • 4-5 Peppers
  • 2-3 Onions
  • Potatoes (any kind – enough to fill up a jelly roll pan, cut up in small chunks)
  • Squash or Zucchini (optional – we don’t always add this, but it’s yummy when we do!)
  • 5 Chicken Apple Sausages (we like the Aidells brand from Costco, but there are other yummy variations of this.) Note: The package comes with two packs of 5 sausages.
  • **If you don’t like sausage, you could make this meal with meatballs, which is also delicious! There are tons of other ingredients you can add, too: sweet potatoes, broccoli, asparagus, tomatoes. Whatever you have in the house!🙂

Then all you gotta do is chop, chop, chop ! This definitely takes some time, but it’s not hard, and totally worth it. I prefer making meals like this when we have people over since all the prep can all be done beforehand. Then, all you have to do is pop it in the oven. Just how I like it.🙂Oh, and my kids actually love this meal, especially the sausage!

I usually put all the potatoes in one pan, and the peppers, onions, etc. in another . Next step: sprinkle olive oil over both prepared pans and mix/stir so everything is evenly coated. As for seasoning, you can’t really mess this up. Here are a few options:

  • McCormick’s Roasted Herb & Garlic Seasoning, OR
  • Any pre-made seasonings that say they’re good on vegetables – I seem to have random/various kinds in my spice cabinet, that I use.
  • If you have nothing else available, you can use a generous amount of salt, pepper, garlic salt, oregano or ANYTHING really. Pretend like you’re a gourmet chef and create your own! You really can’t go wrong!

Sprinkle your seasoning of choice on the potatoes and peppers, etc. and mix again to make sure everything is coated evenly.

I would say bake at 400 degrees for 45(ish) minutes . Note: I usually try to prepare the potatoes first and get those in the oven first, since we like them extra-done.

Then, add the other pan whenever it’s ready and you can even add the sausage a tad later, if you cut those up last . But honestly, if you put everything in at the same time, it turns out great too. Like I said, you can’t mess it up and I modify this recipe each time depending how much of something I have in the house. Sometimes we use more peppers, sometimes more potatoes, etc.

If you’re making this to host another family, I would say use both packs of sausage, like I did in these pictures (10 total), and add a little more of everything else, and then you’re golden! Kinda like the potatoes. YUM!
